Ingredients
What you need:
- 4 cherry tomatoes
- 125g puff pastry
- pinch of paprika
- 1 spring onion
- 1 teaspoon olive oil
- 1.4 fresh pepper (pick your favourite colour)
- 1 tablespoon of tinned or fresh sweetcorn
- other toppings are optional.
What to do
- Lightly put some flour on a mat. Roll out your block of pastry into a rectangular shape on the mat. (about A5 size). You can use a template if easier. Mark a border, like a picture frame, but don’t cut through the pastry completely. Your grown up will be able to help you with this.
- Carefully pick up your pastry and place it on your baking tray and leave to one side.
- Next we need to chop up all your lovely toppings that look like jewels, like gold and rubies. Cut the tomatoes into small pieces, rip and tear the basil leaves and add them to your mixing bowl that has a little olive oil in it. Cut up the spring onion, pepper and add some corn into the bowl and mix it all together. With a spoon put all the mixture into the middle of the pastry and spread it out to the edges of the rectangle shape.
- With the help from a grown up, place it in a preheated oven, 200° fan, 220°c for 15-20 mins until the pastry is golden and brown.
Top tip
These are really yummy served with carrot swords!!
